TETSUYA WAKUDA - 1997


Born June 18, 1959 in the Hamamatsu, Shizuoka Prefecture Japan.

Tetsuya Wakuda is one of Australia’s most celebrated chefs. He arrived in Australia from Japan in 1982 and opened Tetsuya’s Restaurant in Rozelle in 1989 before moving to the new Tetsuya’s Restaurant in 2000. Tetsuya’s has been awarded many honours including three Chefs Hats in The Sydney Morning Herald Good Food Guide since 1992 and in 1993 and 1996 was named the Remy/Gourmet Traveller Restaurant of the Year. In 1996 Tetsuya’s was named winner of the Diners Club International Restaurateurs Choice Award. Recently Tetsuya was named Restaurateur of the Year by Restaurant & Catering NSW and the National Restaurant of the Year in 2001 and 2003.

Tetsuya’s cooking career began with renowned chef Tony Bilson at Kinsella’s in Sydney’s Taylor Square. He then worked in several restaurants prior to opening Ultimo’s Restaurant in 1986.

Tetsuya donates his time to charities annually and has hosted many prestigious events. In February 1998 he appeared as Guest Chef at the famed James Beard Foundation in New York. He travels the world assisting many charities attracting large audiences to sample his extraordinary cuisine.

Tetsuya’s cuisine is unique, based on the Japanese philosophy of natural seasonal flavours, enhanced by classic French technique.
