OLIVER C. SHAUL - 1991


1936 Commenced hotel apprenticeship in Berlin

1938 Attended Ecole Hoteliere, Lausanne, Switzerland

1939 Worked at Fortnum & Mason, London

1940 Joined Cahill’s Restaurants, Sydney, in charge of bake house and menu planning

1941– 45 The Australian Army

1946 Executive Chef for the late Walter Magnus, including four restaurants and outdoor catering company

1947 – 62 Joined Federal Hotels as Managing Director. Built from one hotel to a chain of 10 hotels

1953 Instituted a full-time, 3 year training course in Hotel Management within Federal Hotels. This was later transferred to the education system and was the basis of the course at the Footscray Institute of Technology

1960 Lecturer (part-time) Hotel Design, Faculty of Architecture, Melbourne University

1961 Obtained a Master’s Degree in Hotel and Restaurant Management

1963 Established consulting practice

1968 Established Summit Restaurants

1975 Teacher (part-time Marketing, Diploma Course TAFE Food School

1968-72 Commissioner of Australian Tourist Commission

1950-78 Member of the Board of Australian National Travel Association and A.T.I.A.

1958-60 State and National President of the Australian Hotels Association – Residential Division

1970-85 State and National President of the National Restaurant Association

1987-91 Chairman of the Board of Australia Square Training Limited

1978-85 Industry Representative Apprenticeship Commission of New South Wales

1988-93 Chairman of NSW Hospitality Training Commission
Leo Schofield’s Good Food Guide Lanson Special Award 1988 for Outstanding Professional and Consistency
Silver Medal of the Catering Institute of Australia 1988 

1988 Established the Bicentenary Oliver C Shaul Scholarship in perpetuity through Department of TAFE NSW

1990 Awarded the Member of “Order of Australia” medal for Services to the Hospitality Industry

1991 Award for “Outstanding contribution to the Tourism Industry by an Individual” awarded at the annual NSW Tourism Awards 1991

1991 Awarded the “Inaugural Hall of Fame” Award from Restaurant and 
Catering Association
