PETER DOYLE - 1993

Peter Doyle was born in Watsons Bay. He left school at the age of 12 when his father returned from the war and re-opened their little café on the beach at Watsons Bay. That year they opened with 17 seats.

Until he was 20 he worked on his uncles’ fishing boats. Later he left to join the State Fisheries Department where he worked as a Fisheries Officer for 11 years. He returned to Sydney to work with his brothers at the Pier at Rose Bay which his parents had been operating for some time.

Over the years he and his family have continued to build on the name of Doyles. Opening a restaurant in Manly, then back to the ‘Beach’ at Watsons Bay. Doyles now have 4 restaurants, 1 take-away, retail and wholesale outlet at Sydney Fish Markets, a bottle shop and the Watsons Bay Hotel.

During this time of expansion Peter’s presence was known and felt. He served on numerous Government Boards, namely as a Board Member on the NSW Fish Marketing Authority and the Ryde Catering College. He was also Chairman of the National Aquarium Advisory Committee (Darling Harbour) and Deputy Mayor of Randwick Council.

He is currently a member of the Tourism Advisory Board and Chairman of Ocean Watch and of the National Australian Maritime Museum.

His achievements were many and varied. Some of the better-known ones include being responsible for the building of the Sydney Fish Markets and the building of the Australian Maritime Museum (a $70 million project at Darling Harbour). He was given the Order of Australia in 1988 by the Australian Fisheries Council, presented to the Queen of England, the President of the United States and unlimited dignitaries, princes and presidents.

Peter’s achievements in the restaurant industry often went unnoticed. The Family restaurants continue to employ over 500 people and serve more than one million customers per year. Indeed a mammoth task and a great service to Australian Tourism.
